The fire went out time and time again and Eleonora had to keep re-lighting it. This meant that the cheese-making process was prolonged and the cheese was heated up and stirred more times than normal. Because these were meagre times, the over-cooked cheese was not thrown away but instead put on a shelf and left to its fate. Not until much later did someone think of tasting it. But as soon as it was sampled, people immediately realized how special it was. No one had ever tasted a cheese like it! Strong, aromatic and piquant. Whether the love story is true or not, we cannot say but some people believe that Eleonora knew very well what she was doing when she created the Vasterbotten cheese.
